Grilling is an American pastime that we now do on a year round basis. Although as we head toward spring we really gear up for the long summer days that include visions of seared meat and vegetables from the hot gas grill. Those lazy days of summer just wouldn’t be the same without friends, conversation and the cookouts.

Wood chips can add flavor if you are smoking your meat but that usually takes a lot more time than it takes to grill a steak. The basic grills that do not have stainless steel might be less expensive, but you may not have some of the features that are vital to great tasting barbecue. You can better control the temperature with cast iron grills and porcelain grates. Make sure you get one that has wider rods and are spaced closer together. That will ensure your meat and veggies do not drop through the grates.
Peel the eggplant. Slice the eggplant lengthwise into 1/2 inch slices. Lightly brush with olive oil. Evenly sprinkle the Chinese 5-spice and sea salt onto both sides of the eggplant slices. Place the eggplant directly onto the cooking grates. Cook the slices for two minutes, then flip them. Continue cooking till very soft, this should take an additional one to three minutes. Place the cooked eggplant into a bowl with the yogurt and mash them together, then mix well. Place into a serving dish.
